TOMATO RICE
Tomato rice is a common and loved dish of South India. It can be cooked with Fresh or Leftover rice. It is very easy to cook. If you are very hungry, tomato rice is the best option. It's like one man army. Tasty and Tangy Tomato Rice is one pot dish for Lunch Or Dinner. It can be packed for kids as well as adults in lunchbox. I cook tomato rice with a secret ingredient which enhances the flavour 2 times. It can be complemented with Papad or fryums. Let's start with super tasty and easy popular dish of Rice lovers.

Ingredients:
- 1 tsp Chana dal
- 1 tsp Urad dal
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- Few curry leaves
- 1-2 sliced green chillies
- 1 tsp chopped ginger
- 1 tsp chopped garlic.
- 2-3 large healthy tomatoes
- Leftover Rice- 3 cups
- Salt to taste
- Fresh coriander lleaves
- 1 tbsp of Sambar powder
- 2 tbsp cooking oil
Process:
- Heat oil in a pan.
- When oil is hot, put 1 tsp Urad dal, 1 tsp Chana dal.
- Now, put 1 tsp cumin seeds and 1 tsp mustard seeds.
- Let it splutter and when the dals will turn brown, add curry leaves and green chilli slices.
- Mix it and add chopped ginger and garlic ( you can add ginger garlic paste).
- Cook it for some time.
- Now, add the tomatoes and immediately add salt as per taste.
- Mix properly and Cover with a lid.
- Let it cook for 5 minutes.
- When tomatoes will be soft add the secret ingredient 1 tbsp of SAMBAR powder (it doubles the taste of recipe.
- Mix it and cook for 2 minutes.
- Add leftover rice/ fresh rice to tomato paste in pan.
- Mix it thoroughly and cook for 2 minutes.
- Garnish with fresh coriander leaves.
NB:
- Cook in medium flame to avoid burning.
- You can add red chilli powder as per your taste.
- Tomato paste can be used in place of chopped tomato.
