CRISPY WHITE CHANA FRY
Ingredients :
- Small white bengal gram
- (Soaked overnight/ 5-6 hrs)
- Turmeric powder
- Red Chilli powder

Rice Flour
- Cornflour
- Ginger Garlic paste
- Mustard oil
- Few Garlic Cloves
Process :
- Soak the Chana overnight or for 5-6 hrs
- Add red chilli powder, turmeric powder, rice flour, corn flour.
- Mix everything properly, keep it aside.
- Now, crush few garlic cloves using a mortar and pastel.
- Heat mustard oil in a pan/ wok/ kadhai.
- When hot, add the crushed garlic.
- Let it cook till golden brown.
- When garlic turns brown, add soaked Chana and spices mixture.
- Mix it and cook it in medium flame.
- If you want you can add garam masala at this stage and mix.(Optional)
- Let it cook for 5-10 mins, till the white Chana will be roasted from all side.
- Chana changes it's colour and it will be crispy from outside and soft inside.
- Turn off the flame.
NB:
- If you forget to soak the chana, you can soak it in hot water for 2 hours and it will be ready to cook as it is very small in size.
- If you want you can add Green chilli slices along with `crushed garlic and also you can add little Garam Masala .(Optional)
