CRISPY WHITE CHANA FRY: SMALL CHICK PEA FRY/ DESI CHANA or CRISPY TIASI CHANA

 CRISPY WHITE CHANA FRY




This is white whole Bengal gram  or small chick pea. It is also known as desi Chana. It's the miniature variety of Kabuli Chana. It is widely available in Western Odisha and Chhattisgarh. Locally it is known as TIASI CHANA/ DHOB CHANA.









Ingredients :

  1. Small white bengal gram
  2. (Soaked overnight/ 5-6 hrs)
  3. Turmeric powder
  4. Red Chilli powder
  5. Rice Flour
  6. Cornflour
  7. Ginger Garlic paste
  8. Mustard oil
  9. Few Garlic Cloves

Process :

  1. Soak the Chana overnight or for 5-6 hrs
  2. Add red chilli powder, turmeric powder, rice flour, corn flour.
  3. Mix everything properly, keep it aside.
  4. Now, crush few garlic  cloves using a mortar and pastel.
  5. Heat mustard oil in a pan/ wok/ kadhai.
  6. When hot, add the crushed garlic.
  7. Let it cook till golden brown.
  8. When garlic turns brown, add soaked Chana and spices mixture.
  9. Mix it and cook it in medium flame.
  10. If you want you can add garam masala at this stage and mix.(Optional)
  11. Let it cook for 5-10 mins, till the white Chana will be roasted from all side.
  12. Chana changes it's colour and it will be crispy from outside and soft inside.
  13. Turn off the flame.


    Delicious Crispy Chana fry is ready to eat.

NB:

  1. If you forget to soak the chana, you can soak it in hot water for 2 hours and it will be ready to cook as it is very small in size.
  2. If you want you can add Green chilli slices along with `crushed garlic and also you can add little Garam Masala .(Optional)
