YUMMY, TASTY LEMON RICE

 

TASTY, TANGY and SOUR LEMON RICE


Lemon rice is one of the most popular and common rice recipe from South India. It is a rice dish, that is available as prasadam in most of the South Indian temples. It can be prepared with fresh or leftover rice. It tastes really good with crunchy Papad. 


Ingredients:


1) Mustard seed (1 tsp)
2) Cumin seed (1tsp)
3) Split black gram/ Urad dal (1 tsp)
4) Split Bengal Gram/ Chana dal (1 tsp)
5) A pinch of Asafoetida (Hing)
6) Turmeric powder (1 tsp)
6) Red and Green chilli (2 pcs each)
7) Few Curry leaves
8) Fresh Lemon juice
9) Fresh coriander leaves
10) Groundnuts (2 tbsp)
11) 2-3 cups leftover rice


Procedure:


1) Take a pan and heat 2 tbsp refined oil.
2) Add mustard seeds, cumin seeds, Urad dal, Chana dal and Asafoetida. Let it splutter, add chillies, curry leaves and turmeric powder and mix it properly.
3) Now, add the leftover rice. Put salt as per taste and sprinkle lemon juice.
4) Mix it thoroughly. If the rice is hard sprinkle a little water and mix. Cover and cook for 2-3 mins and you are done.
5) Garnish with fried/ roasted ground nut and fresh coriander leaves.

NB:

  1. ‌If you want to make the lemon rice using fresh cooked rice,  you add 1/2 tsp of Turmeric powder and also salt in water to get a uniform yellow colour and rice will absorb the salt.
  2. Lemon juice amount can be increased or decreased, as per required sourness.
