NAVRATAN PULAV/ PULAO


Rice is the staple food of India. And we have invented different ways to cook the rice along with different ingredients to enhance the flavour. One of them is PULAV / PULAO. 

NAVRATAN means nine GEMS. As the name suggests NAVRATAN PULAO is a combination of 9 exotic dry fruits and seasonal vegetables and rice with a touch of Indian spices which gives a ROYAL texture and aroma to our rice. It is a ROYAL dish and rich in nutritional value. It is prepared in festive occasions or when you want to  eat something special. It's the King of all rice recipes. It tastes very good with Shahi paneer/ Dal fry/ Raita. 

I have made it with leftover rice. If you want, you can make with freshly cooked rice. 

INGREDIENTS:

  1. Leftover Rice
  2. Cashew
  3. Almonds
  4. Raisins
  5. Green beans 
  6. Carrots
  7. Paneer cubes
  8. Green peas
  9. Sahi jeera
  10. Whole Garam masala slightly crushed (Cinamon, Black Cardamom, bay leaves, black pepper. Cloves) 
  11. Ghee
  12. Lemon juice
  13. Salt to taste

PROCESS:

  1. Dry roast all the whole garam masalas and slightly crush it in a grinder. 
  2. Heat ghee in a wok or pan. 
  3. Fry all the dry fruits one by one. 
  4. Fry the cut vegetables till it turn slightly soft. 
  5. Fry the paneer cubes till it turns golden colour. 
  6. In the same ghee, add shahi jeera and let it splutter. 
  7. Add the crushed Garam masala and cook till the aroma of spices comes out. 
  8. Now, add the leftover rice and give it a mix. 
  9. Add salt as per taste and mix. 
  10. Add lemon juice and all the fried ingredients and mix thoroughly. 
  11. Put the lid and let it cook for 5 mins
  12. Enjoy your NAVRATAN PULAV with Shahi paneer/ Dal fry/ Raita



NB:
  1. If you are using leftover rice, sprinkle little water if the rice is hard. 
  2. Adding saffron to the Rice will give extra aroma and colour to the special recipe. ( it's totally optional)
