CURD RICE
Curd rice is very popular in South India.It is nothing but curd (yogurt) mixed with cooked rice, herbs and then tempered.
A south Indian meal is incomplete, if they will not end with a serving of curd rice. South Indian food are hot and spicy and curd rice helps to cool the stomach after a hot meal. The combination of nutritional value of curd rice makes it very healthy.

- It helps to bring down the body temperature.
INGREDIENTS
1) Cooked Rice ( Leftover rice for method-1)
2) Fresh curd
3) Boiled milk
4) Salt ( Rock salt is optional)
5) Crushed black pepper
6) Pomegranate
7) Freshly chopped coriander leaves
8) For tempering in method -2( Urad dal, chana dal, mustard seeds, cumin seed, red chillies, curry leaves)
PROCESS
- Take the leftover rice in a grinder jar.
- Add milk and grind it for a few seconds. Just to get a coarse texture, no need to make a fine paste.
- Transfer it to a bowl.
- Add good amount of fresh curd.
- Add salt/ rock salt, crushed black pepper and mix it.
- Garnish it with coriander leaves and pomegranate seeds.
- It's ready to serve in your lunch or dinner.
- Cook the rice. Spread it in a plate and let it cool down.
- Take the rice in a bowl and mash it using a spatula till it becomes coarse.
- Now, add 3-4 tbsp of milk and generous amount of fresh curd.
- Add salt/ rock salt, crushed black pepper, fresh chopped coriander leaves.
- Give it a good mix.
- Tempering: In a pan heat oil, add urad dal, chana dal, mustard seeds, cumin seeds, red chillies, curry leaves. Let it crackle and then put it over the prepared mixture.
- Mash the cooked rice till slightly coarse.
- Add 3-4 tbsp of curd and 1 cup of warm boiled milk.
- Mix it properly.
- Add salt and crushed pepper.
- Give a good mix and transfer the mixture to a tiffin box and garnish on the top with pomegranate seeds and chopped coriander leaves.
- Cover the lid and pack it in your lunch box.
- After 3-4 hours when you open your box during lunch time you will see that the curd is set.
- Enjoy the super healthy lunch in school / college/ office.
TIPS
Curd rice has the tendency of becoming
sour when kept outside. So adding some
milk to the rice will prevent the curd from turning sour. If you are packing it for lunchbox, add more milk and just few spoons of curd. After 3-4 hours, when you will have your lunch the curd would have been set completely.
